Lemony Plant-Based Chickpea Soup

Hey everyone,

today, I am going to share with you the most delicious, lemony and super easy-to-make Chickpea Soup, inspires by the Mediterranean Cuisine and it's 100% plant-based!

This soup is one of my favourite dishes since I was a kid, when my mum used to make it for us.

So, let's start.

The ingredients are :

2 cups of dried Chickpeas

1 big Onion

2 big Carrots

Extra Virgin Olive Oil

Juice of 1 Lemon

Baking Soda

Dried Veggies & Herbs Mixture


Black Pepper


and, of course, water.

How to make it :

We start the day before by soaking our chickpeas overnight into water that covers them completely.

In the morning, we drain them and then add 1-2 tbsps of baking soda and mix them really well, so that the baking soda covers all of them. We leave them to rest for around 30 minutes. ( This is my mum's secret, that makes the chickpeas really soft )

After that, we rinse them really well and put them into a pot together with double the amount of water and we boil them for 5-10 minutes. They will start foaming and we have to remove the foam off of the top of the water and through it.

When the 10 minutes are gone, we drain them again, we clean the pot from the foam and we put the chickpeas back in the pot, together with the carrots and onion, chopped in small pieces, adding around 2 tbsps of extra virgin olive oil.

We, then, add water until the whole pot reaches 2,5 liters in volume. We, also, add our spices, 1 tbsp of the dried veggies and herbs mixture, 1 tsp paprika and black pepper, as we wish.

We let the soup boil in medium heat for around 1-1,5 hours, depending on the chickpeas, with the lead on.

In the mean time, we prepare a mixture of the juice of 1 lemon, plus the same amount of extra virgin olive oil. We put them together in a jar and we shake them really well.

When the hour has passed, and the chickpeas have become soft and tender, we add the lemon/oil mixture into the soup, little by little, while we mix it, together with salt, and we turn off the heat.


Time to enjoy it.

The amount of the soup is perfect for 4 people.
